{"id":21652,"date":"2016-07-06T21:35:11","date_gmt":"2016-07-06T20:35:11","guid":{"rendered":"http:\/\/eco123.info\/en\/?p=21652"},"modified":"2016-11-23T09:49:16","modified_gmt":"2016-11-23T09:49:16","slug":"anccral-portugals-third-revolution","status":"publish","type":"post","link":"https:\/\/eco123.info\/en\/portugal-en\/report-en\/photoreport\/anccral-portugals-third-revolution\/","title":{"rendered":"ANCCRAL | Portugal\u2019s third revolution"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21617 size-full aligncenter\" src=\"http:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-02.jpg\" alt=\"ANCCRAL-02\" width=\"781\" height=\"890\" srcset=\"https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-02.jpg 781w, https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-02-768x875.jpg 768w\" sizes=\"auto, (max-width: 781px) 100vw, 781px\" \/>EN In the dairy of the multi-purpose centre in the parish of Azinhal in the municipality of Castro Marim in the Algarve, where time stands still from time to time, there has been \u2013 almost without anyone noticing it \u2013 a genuine revolution.<\/p>\n<p>For five days a week, the goat rearers association ANCCRAL (Associa\u00e7\u00e3o Nacional de Criadores de Caprinos da Ra\u00e7a Algarvia) produces fresh goat\u2019s cheese there, and an incredibly good natural yoghurt, unprecedented in the region.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21632 size-full aligncenter\" src=\"http:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-07.jpg\" alt=\"ANCCRAL-07\" width=\"1000\" height=\"665\" srcset=\"https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-07.jpg 1000w, https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-07-768x511.jpg 768w, https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-07-310x205.jpg 310w\" sizes=\"auto, (max-width: 1000px) 100vw, 1000px\" \/><\/p>\n<p>As part of his secondary activity, as the finance department would call it, (atividade secund\u00e1ria), Pedro Const\u00e2ncia (see photo) collects the milk from the goat farmers from Monday to Friday in the early morning with his 2,000 litre stainless steel tanker.<\/p>\n<p>Solange Pereira (aged 26) and Zoryana Vladymyzova (aged 44) cool the milk down as soon as Pedro has delivered it to the dairy, sterilise it later in readiness for preparing the cheese and the yoghurt, and add the only other ingredients, wild thistle tea (8 grams of thistle to 100 litres) and sea salt (80 grams to 100 litres).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-21641\" src=\"http:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-10.jpg\" alt=\"ANCCRAL-10\" width=\"195\" height=\"630\" \/>There are two fresh cheeses in the range, one is plain, the other is made with regional herbs, oregano and thyme. Ant\u00f3nio, Alcoutim and Castro Marim, this is the basis of their livelihood. They receive between 55 and 65 cents per litre of goat\u2019s milk, depending on the season.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-21620 size-full\" src=\"http:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-03.jpg\" alt=\"ANCCRAL-03\" width=\"781\" height=\"890\" srcset=\"https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-03.jpg 781w, https:\/\/eco123.info\/wp-content\/uploads\/ANCCRAL-03-768x875.jpg 768w\" sizes=\"auto, (max-width: 781px) 100vw, 781px\" \/><\/p>\n<p>All the natural yoghurts (sugar-free!) come in glass pots with metal tops, 100% recyclable.
