Nº 122 – Emission-free cooking and baking: for free and outdoors

Saturday the 15th of January 2022.

It happened in 2016 and in 2018, then again in 2020 and once more now in 2022: every other year Faro hosts a meeting of the International Community of the Friends of Solar Cooking and Baking, by the name of CONSOLFOOD. This time the meeting is taking place between Monday 24 January and Wednesday, 26 January, and this time under the conditions of a global pandemic the event is held online at www.consolfood.org.

Many people in developing countries still burn wood, charcoal or even rubbish on open fireplaces for cooking. The reason they do this is because they have no access to electricity or gas. The inefficient burning of wood, charcoal, dung and plant debris causes health problems, deforestation and greenhouse gas emissions. While the potential of thermal solar energy for food processing, such as dehydrating, cooking and pasteurisation is well known, acceptance and divulgation of this technology are not moving at the pace that would be desirable in ecological terms.

In the sunny parts of the developed world, including Portugal and Spain, the USA and Mexico, only a handful of people would know about solar cookers, and most still prefer to cook with gas and electricity. To raise the acceptance of solar cookers in sunny climes for cooking, baking and dehydrating food, as well as for sterilising water is the declared goal of Professor Celstino Ruivo of Faro University (Institute of Engineering and the Association for the Development of Industrial Aerodynamics).

Under normal conditions, the CONSOLFOOD 2022 is also a fair that presents very different solar cookers, trying them out in practical terms for cooking delicacies subsequently offered up for sampling on the Campo de Penhas. And it’s an exchange of know-how and recipes from the many different cuisines on this Earth. Representatives from Mexico, Brazil and India will take part, as well as others from the USA, Germany, Great Britain and Spain.

The event will be about technical progress in solar cooking, solar food transformation and related issues. As always Faro University will welcome experts from all over the world who will present and discuss the latest developments in solar cooking & baking: this time only online and at the computer on www.consolfood.org – instead of at the stove.
